Nirmal’s is the realization of a lifelong dream for owners Oliver and Gita Bangera — a vision to highlight the true diversity of Indian cuisine beyond the familiar.

Our menu showcases authentic preparations inspired by India’s rich culinary regions, offering guests a unique experience of dishes rarely seen in other Indian restaurants.

Located in Seattle's historic Interurban Building, Nirmal's mirrors the spirit of tradition and modern flair. Executive Chef Ashish Bagul brings together local Pacific Northwest ingredients with spices and recipes from across India.

Chef Sunit Sharma is an internationally recognized chef with over 26 years of experience leading top-tier kitchens across India and abroad.

  • Guinness World Record holder (2017–2019, Goa)
  • Awarded Outstanding Culinary Leader 2023, Star Chef 2019
  • Former Executive Chef at Cidade de Goa (Taj Group)

He has represented India internationally at culinary events like Salone del Gusto in Italy, and featured on shows such as NDTV 24x7's Will Travel for Food.

Chef Sunit is an advocate for traditional and local cuisines, and actively supports sustainable food movements like Slow Food and Chefs for Peace.

He currently serves as Vice President of the Culinary Forum of Goa, working to elevate Goan cuisine and unite chefs across the region.

He holds degrees in Economics and Hotel Management, and continues to inspire future generations through innovation, mentorship, and a deep love for Indian culinary heritage.
